Tilapia Chipotle Ramen Soup

Tilapia’s naturally mild flavor works perfectly in this Japanese-Mexican fusion recipe. The chicken-stock base brings the heat while a sprinkling of pepitas lends some welcome crunch.

Ingredients

  • 4 Regal Springs Tilapia loins
  • 8 cups chicken stock
  • 1 tbsp TABSCO® brand Chipotle Pepper Sauce
  • 2 3-oz packages dry ramen noodles
  • 2 tsp chipotle powder
  • ½ cup canned diced tomatoes drained
  • ¼ cup canned roasted corn drained
  • 2 tbsp pepitas
  • salt to taste

Instructions

  1. In a large pot, bring chicken stock and TABSCO® brand Chipotle Pepper Sauce to a boil. Remove from stove, add dry ramen noodles and cover. Set aside.

  2. Grill Regal Springs Tilapia loins for approximately 4 minutes per side, or to an internal temperature of 165°F. Remove from grill and season with chipotle powder and salt.

  3. Portion soup into four bowls and add a piece of Tilapia to each. Garnish with tomatoes, corn and pepitas.
