Tilapia stir fry with peppers, broccoli and mushrooms

A stir fry is one of the easiest and most delicious meals you can make. And it tastes even better when you add Tilapia. Loaded with fresh bell peppers, broccoli, mushrooms and snap peas—and tossed in a spicy black bean sauce—this recipe can be enjoyed as is or piled on top of rice or quinoa.

Ingredients

  • 2 Regal Springs Tilapia fillets cut into small pieces
  • 2 tbsp canola oil
  • 1 red bell pepper thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 cup broccoli florets
  • 1 cup brown mushrooms sliced
  • 1 cup snap peas
  • 2 tbsp rice wine
  • ½ cup black bean paste
  • 1 small red chili pepper finely diced
  • ¼ cup green onion sliced

Instructions

  1. In a wok, heat canola oil until very hot.

  2. Add bell peppers, broccoli and mushrooms. Stir for 1–2 minutes.

  3. Add snap peas and Regal Springs Tilapia, stirring well for 2–3 minutes.

  4. Add rice wine and black bean paste.

  5. Add the diced chili pepper and green onion.

  6. Toss and serve with rice or quinoa, if desired.
