Tilapia Sliders with Lobster Sauce

These Tilapia sliders are made healthier with lean Regal Springs fillets, but they’re still loaded with flavor thanks to a zesty lobster sauce—a mix of mayo, ketchup, lemon juice, mustard, Old Bay Seasoning and Tabasco.

Ingredients

Lobster Sauce

  • 1 lemon juiced and zested
  • 1 cup mayonnaise
  • ½ cup cooked lobster meat roughly chopped
  • ¼ cup ketchup
  • 2 tsp chives minced
  • 1 tsp Dijon mustard
  • ½ tsp Old Bay Seasoning
  • TABASCO® brand Original Red Sauce to taste

Tilapia Sliders

  • 1 pound Regal Springs Tilapia fillets cut into quarter-inch pieces
  • Salt and pepper to taste
  • Grape seed oil
  • 2 tbsp mayonnaise
  • Iceberg lettuce shredded
  • Roma tomatoes sliced
  • 4 soft brioche rolls

Instructions

  1. In a bowl, mix together mayonnaise, lobster meat, ketchup, lemon juice (reserve 1 tbsp for the Tilapia), lemon zest, chives, mustard, Old Bay Seasoning and TABASCO® sauce. Set aside.

  2. Season Regal Springs Tilapia fillets with salt and pepper, and brush with grape seed oil. In a hot skillet over an open grill, sear Tilapia until firm and flaky (about 3 minutes per side). Drizzle cooked Tilapia with 1 tablespoon lemon juice.

  3. Brush inside of buns with mayonnaise and briefly toast on all sides.

  4. To assemble your sliders, place a dollop of lobster sauce on the bottom of each bun. Top with lettuce, tomato, grilled Tilapia, and another dollop of lobster sauce. Close sandwich with tops of buns and serve immediately.
