Stuffing-Crusted Baked Tilapia

This stuffing-crusted baked Tilapia will make for a delicious alternative to the traditional turkey centerpiece at this year’s Thanksgiving. Serve it alongside all the usual trimmings of roasted vegetables, Yorkshire puddings and fresh greens (followed, of course, by pumpkin pie), and we guarantee your pescetarian-friendly holiday feast will be a hit with your guests.

Ingredients

  • 6 Regal Springs Tilapia fillets
  • ¾ cup whole wheat breadcrumbs
  • ½ cup parmesan cheese grated
  • ¼ cup slivered almonds
  • 2 tsp fresh thyme
  • 2 tsp fresh sage finely chopped
  • 1 tsp dried minced onion
  • ½ tsp garlic powder
  • ½ tsp celery salt
  • 1 tsp salt
  • Pepper to taste
  • Olive oil spray sub any cooking spray

Instructions

  1. Preheat oven to 425°.
  2. Lay the Tilapia fillets flat on a baking sheet lined with parchment paper.
  3. In a medium shallow bowl, combine breadcrumbs, parmesan cheese, almonds, thyme, sage, minced onion, garlic powder, celery salt, salt and pepper. Mix until well combined.
  4. Sprinkle breading over each Tilapia fillet until well coated. Generously spray olive oil cooking spray over Tilapia.
  5. Gently flip each Tilapia over and repeat the breading process.
  6. Bake for 8–12 minutes or until the thickest part of the Tilapia is white and flaky, and the breading has browned.
  7. Serve with Thanksgiving accoutrements, and enjoy.
