Preheat oven to 357°F.
Place Regal Springs Tilapia fillets on a baking sheet, and drizzle with olive oil and lime juice. Sprinkle with salt, pepper, mint and cilantro. Bake for 15 minutes.
When Tilapia is finished baking, place it into a collard green leaf and top with cucumber, avocado, feta and tzatziki. Roll into a wrap (like a taco) and enjoy!
