Green Goddess Tilapia Lettuce Wraps

Ingredients

  • 2 Regal Spring Tilapia fillets
  • 1 tbsp olive oil
  • ½ lime juiced
  • ¼ tsp salt
  • tsp pepper
  • 1 tbsp fresh mint chopped
  • 1 tbsp fresh cilantro chopped
  • 2 kale or collard green leaves stems removed
  • ½ cucumber diced
  • ½ avocado thinly sliced
  • ¼ cup feta cheese
  • 2–3 tbsp tzatziki

Instructions

  1. Preheat oven to 357°F.

  2. Place Regal Springs Tilapia fillets on a baking sheet, and drizzle with olive oil and lime juice. Sprinkle with salt, pepper, mint and cilantro. Bake for 15 minutes.

  3. When Tilapia is finished baking, place it into a collard green leaf and top with cucumber, avocado, feta and tzatziki. Roll into a wrap (like a taco) and enjoy!
