These Tilapia lettuce wraps are exactly what you want a low-carb dinner to be: fresh, healthy and flavorful. Plus, they’re a breeze to make!
Green Goddess Tilapia Lettuce Wraps
- 2 Regal Spring Tilapia fillets
- 1 tbsp olive oil
- ½ lime juiced
- ¼ tsp salt
- ⅛ tsp pepper
- 1 tbsp fresh mint chopped
- 1 tbsp fresh cilantro chopped
- 2 kale or collard green leaves stems removed
- ½ cucumber diced
- ½ avocado thinly sliced
- ¼ cup feta cheese
- 2–3 tbsp tzatziki
Preheat oven to 357°F.
Place Regal Springs Tilapia fillets on a baking sheet, and drizzle with olive oil and lime juice. Sprinkle with salt, pepper, mint and cilantro. Bake for 15 minutes.
When Tilapia is finished baking, place it into a collard green leaf and top with cucumber, avocado, feta and tzatziki. Roll into a wrap (like a taco) and enjoy!
